Mousse de atún, aguacate y tomates secos (Mousse de thon tartare d’avocat et tomates séchées)

Deliciosa receta con aguacate, un buen aperitivo, entrante o lo que queráis, seguro que si la probáis será de esas recetas que repetiréis muy a menudo.
Ademas para el verano es el plato perfecto, completo, nutritivo y fresquito.
Y lo mejor es que en diez minutos está listo para comer.

Mousse de thon tartare d’avocat et tomates séchées

 1 Lima
 3 Ramitas de cilantro fresco
 3 Ramitas de perejil fresco picado
 Ralladura de naranja
 200 g Atun en aceite
 50 g Queso fresco tipo Philadelphia
 1 tsp Sal marina
 Pimientas molidas
 50 g Tomates confitados cortaos en brunoise
 2 Aguacates cortados en brunoise

Preparación

Cortar y exprimir el limón, luego poner la ralladura en el tazón y reservar el jugo. Añade el cilantro, el perejil y la ralladura de naranja al vaso y, a continuación, corta 5 s/velocidad7. Raspa los lados del tazón con la espátula.

Agrega el atún, 15 g de jugo de limón, esparce el queso, sal y pimienta, luego mezcle 20 seg/giro inverso/vel.3

En un tazón, junta los 15 g de jugo de limón, los tomates confitados y los aguacates. Coloca un cortador de galletas (7 cm) en un plato y coloca una capa regular de tartar de aguacate sobre él. Retire suavemente el círculo y coloque una quenelle de mousse de atún en el tartar. Decorar con una hoja de cilantro y repetir con el resto de los ingredientes. Servir muy fresco.
