Tacos de Pulled Pork

Si eres amante de los tacos en todas sus variedades, esta es tu receta.

La única condición es que una vez cocinada la carne a baja temperatura te molestes un poquito mas y deshaces la carne en hebras. No te costará nada, porque la carne queda super tierna. Por ese motivo casi no te parecerá necesario deshilacharla, pero créeme que luego es un manjar.

Puedes congelar el resultado en diferentes Twppers y sacarlos cuando los necesites.

Dependiendo de tus gustos, puedes condimentarlo mas o menos fuerte, con achiote, chile de árbol, chile guajillo, chiles chipotles, todo lo acepta bien.

A partir de ahora te costará tomar tacos fuera de casa.

 3 Dientes de Ajos
 2 cuchara AOVE (Aceite de Oliva Virgen Extra)
 1 cuchara Pimientas
 1 cucharilla Humo en polvo
 50 ml Agua

Pela los ajos y aplástalos.
Mezcla el azúcar, los pimentones, la sal, el comino y la pimienta en un bol. Añade los ajos prensados, la mostaza y el aceite, y mezcla por completo. Si utilizas humo añádelo

Quita los tejidos y la grasa de la parte que no tiene piel (conserva la piel), unta la pieza con la mezcla y deja que macere durante dos horas tapado con film plástico. También puedes introducir la paleta en una bolsa de plástico con cierre de zip, añadir la mezcla y masajear la bolsa para que se distribuya la marinada.

Coloca la carne sobre en el recipiente con la parte de la piel hacia arriba. Si tienes una rejilla apta para uso alimentario o una vaporera, puedes ponerla en la base para separar la carne de sus jugos; si no la tienes ignora la recomendación, no es imprescindible ponerla. Añade medio vaso de agua al fondo (50ml), tapa la olla y cocina durante 8 horas en BAJA.

La carne deberá estar tierna y desmenuzarse fácilmente. Es conveniente dejarla reposar un poco para que pierda el golpe de calor antes de empezar a desgarrarla con la ayuda de dos tenedores.

Aprovecha los jugos de la carne que habrán quedado en el fondo y recupéralos para aliñar la carne. También puedes mezclarla con un buen ketchup, con salsa barbacoa. O lo que mas te guste para tus tacos o bocadillos.
